Five ways to cook with soya at home
Soya is one of the cheapest sources of protein you can buy. Here is how our team cooks with it.
A kilo of dry soya beans contains more protein than a kilo of beef, at a fraction of the price. It just takes a little know-how. We asked our team for their favourite ways to cook it.
- Soya milk: soak overnight, blend with water, strain and simmer for 20 minutes.
- Uji: add a spoon of roasted soya flour to maize porridge for a richer, more filling breakfast.
- Roasted snack: soak, dry and roast with salt and chilli until crunchy.
- Tofu: curdle fresh soya milk with lemon juice and press it overnight.
- Stew: boil soaked beans until soft and cook them like any other bean, with tomato, onion and coconut.
